New Year’s Eve

It has been a busy couple of days with the guests and all the cooking (more posts to follow about this) We spent last night at the Foundry and the Burren.  It was just like the old times at Mcphails; lots of singing, dancing and fist pumping.  So after sleeping for 6 hours, I somehow dragged myself out of bed at nine to make peanut butter cookies and champagne cupcakes.  I love the champagne cupcakes,  I made them in the spring for Jen and Chris’s engagement and thought they would be perfect for New Year’s Eve.

Ingredients:

  • 1 boxed white cake mix
  • 1 1/4 cups of champagne
  • 1/3 cup of vegetable oil
  • 3 egg whites

Frosting

  • 1 stick of softened butter
  • 1 tsp of vanilla
  • 1/4 cup of champagne
  • a box of confectionary sugar

Mix the cake mix, champagne, vegetable oil and eggs together until well blended.  Pour into cupcake pans and bake at 350 for 15 minutes.

For the frosting, beat butter with the paddle attachment on a stand mixer. Add champagne and vanilla.  Slowly add confectionary sugar until desired consistency.  Spread onto cooled cupcakes and sprinkle with sugar crystals if desired.

Next I had to iron my dress for the evening and also Megan’s.  (She ripped out the hem in the dress I made her last summer) Megan ‘s dress was a pain to iron, but I cannot complain since I designed it. The New Year’s Eve party is cocktail attire so I needed something fabulous.  You may recall that I was looking for the perfect gray cocktail dress.  I found a gray sateen stretch fabric and made a strap less fitted dress.  However it needed just a little pop.  I found a silver and black shimmer fabric (It kind of looks like sequins) I actually used the wrong side of the fabric as the right side created a belt.  I used a bra closure on the belt, so I have the option of removing it.

People are arriving around 8 so I should get everything ready(starting with a shower).  Megan is also wearing a dress that I made so check back for photos from the party.
