Margarita Cupcakes

Feliz Cinco de Mayo!  Many people think that Cinco de Mayo is Mexican independence day, but it is actually when the Mexicans defeated the French at the Battle of Puebla in 1862 even though they were out numbered 2-1.  Americans use this holiday as an excuse to drink margaritas and eat tacos.  So getting with the theme of the day, today’s recipe is for margarita cupcakes.  You will need

  • a boxed white cake mix
  • 9 oz of margarita mix
  • 3 oz of tequila
  • 1 oz of triple sec
  • 3 egg whites
  • 2 tbsp of vegetable oil
  • 1 tbsp of lime juice
  • 1 cup of butter
  • 2 tbsp of margarita mix
  • 1 tbsp of lime juice
  • 4 cups of confectionary sugar

Mix margarita mix, tequila, triple sec and lime juice together.  Mix in eggs, vegetable oil and cake mix.  Pour into cupcake pan and bake for 20 minutes.  Does anyone else use an egg separator?

For frosting beat butter until soft.

Turn on low-speed and add margarita mix and lime juice.  Slowly add sugar scrapping the sides of the bowl until well mixed.  If frosting is thick, then add an extra splash of lime juice.  Frost cupcakes and enjoy!
