Irish Week: Irish Coffee Bars

I found this recipe in this month’s issue of Martha Stewart Living and just had to make it.  I figured that it would be perfect to make for book club.

  • 2 stick of unsalted butter
  • 2 cups of flour
  • 1 tsp of baking powder
  • 1/4 tsp of baking soda
  • 2 cups of light brown sugar
  • 3 tbsp of coffee
  • 1/4 tsp of salt
  • 2 eggs
  • 1 tsp of vanilla
  • 1/2 cup of sliced almonds
  • 1 tbsp of butter
  • 2 tbsp of Jameson Irish whiskey
  • 1/4 cup of powdered sugar

Mix flour, baking soda, and baking powder in a bowl and set aside.  Melt butter and mix together with brown sugar, coffee and salt.  Add eggs and vanilla.  Slowly add flour mixture until blended.  Grease a 9 x 13 inch pan and pour batter in.  Sprinkle almonds on top and bake at 350 for 25 minutes.  Remove bars from the oven and let cool completely.

For the icing, melt butter and whisk together with whiskey.  Gradually add powdered sugar until thick.  Using a spoon, drizzle icing over bars.  Let icing harden before cutting.

I did not have any Jameson, the only whiskey I had on hand was Jack Daniel’s, but I needed Irish whiskey for this, not Tennessee whiskey.  However Mom had some Jameson, but did not want to loan out the entire bottle.  Instead she poured some in an empty Poland Spring bottle, just like college.

I also used my Belleek serving dish for the first time, that I bought in Ireland last year.

Warning- since there is coffee in them I do not recommend eating one (or three)  right before bed.  The caffeine may keep you awake.
